Sweet potato is a local food that can reduce dependence on rice and flour consumption. It the main source of carbohydrates, after rice, cassava, corn. The benefits potency sweet potatoes as alternative needs to be developed, especially in rural areas. However, has not been considered an important high economic value commodity Indonesia. have used non-food raw materials developed countries i.e. noodles, fried potatoes, desserts, confectionery, soy sauce, flour, wine, vinegar, nata de coco, bioethanol others. Around 89 % Indonesia are cultivated for providing communities, rest industrial animal feed. content includes vitamins, minerals. Yellow/orange rich beta-carotene purple contains anthocyanin (antioxidants). production still limited traditional less attractive compared products. Meanwhile, intermediate products including instant starch substitute pastry products, wet cakes, breads, noodles.
